I found this recipe in my daily newspaper, and decided to share it with visitors to Peach-Depot.com!
This recipe makes grilled peach pizzas with prosciutto using pizza dough crusts or flatbreads (pita or naan).
Grilling peaches caramelizes the fruit, making it even sweeter.
A few minutes on the grill also gives the peaches an amazing smoky flavour.
This extra flavour is the perfect accompaniment to a thin layer of salty, smoky prosciutto.
Note - This recipe makes 3 - 9" peach pizzas.
3 pizza dough crusts, or flatbreads (pita or naan)
2 medium size peaches, cut into 1/2 inch wedges
1 pound fresh mozzarella cheese, thinly sliced
12 thin slices prosciutto, cut in half
1/3 cup fresh basil
olive oil, for drizzling
Heat a grill /barbeque or grill pan on high heat and grill pizza crust, or flatbreads until grill marks are dark, then set aside.
Grill the peach wedges until caramelized, about 2 minutes per side.
Preheat the oven to 400° F, or lower the grill temperature to medium heat.
Spread the cheese on the grilled pizza crusts.
Bake or grill (covered with a lid) directly on the grates until the cheese melts and is bubbling, about 8 minutes (time may vary a bit of grilling).
Remove pizzas from the oven or grill.
Top with prepared peaches, prosciutto and basil.
Drizzle with olive oil.
