Grilled pineapple with mango gelato served in martini glasses ... A quick barbequed dessert with amazing flavour.
The heat of the grill draws out and caramelizes the natural sugar in the pineapple, creating a warm, delicious, fruity, and unique dessert for around the grill.
Surprise your family and friends with this quick barbequed fruit recipe!
1 fresh pineapple
3 tbsp. lemon juice
1 tbsp. liquid honey
1/8 tsp. cinnamon
1 - 500 gr. size container of Mango Gelato
Slice the whole pineapple lengthwise in quarters, and remove the core. Remove the peel with a sharp knife, and cut pineapple into spears
In a small bowl, combine the lemon juice, liquid honey and the cinnamon and stir until mixed.
Prepare grill for medium heat.
Ensure grill grates are clean and oiled.
Transfer the pineapple spears to the grill, and brush lightly with the honey glaze mixture.
Grill for about 3 - 4 minutes on medium, turn, brush with glaze, and grill for about another 3 - 4 minutes, or until fruit is warmed, and some grill marks show.
Watch the grilling fruit! It is advisable not to leave the fruit unattended because fruits with a high natural sugar content can go from golden brown to over done or very burnt in a short time.
Transfer the grilled pineapple to martini glasses, and add a scoop of Mango gelato on top.
