This Easy Peach Cobbler Recipe is quick to make, and makes a most scrumptious peach dessert or peach snack recipe.
You can use fresh peaches, canned peaches, or frozen peaches for this cobbler.
Serve this delicious dish warm or cool with ice cream, dessert topping, or whipped cream, or plain!
(You don't need to have blueberries on hand to make this dessert, I just added them for garnishing!)
Note - If using canned peach slices, strain the peaches in a sieve, and discard the excess liquid.
If using frozen peach slices, thaw them first, strain the peaches in a sieve, and discard the excess liquid, and increase the biscuit mix amount by 1/4 cup.
4 cups peach slices, (fresh, frozen, or canned peaches)
3/4 cup granulated sugar, divided
1/2 tsp. ground cinnamon, divided
1/2 cup milk
1 cup biscuit mix (Example: "Bisquick")
1 egg, lightly beaten
1 tbsp. vegetable oil
1 tsp. vanilla extract
1 tsp. lemon juice
icing sugar, for garnish, optional
ice cream or whipped cream, for garnish optional
fresh blueberries, for garnish, optional
In a bowl, combine the peaches, 1/4 sugar, and 1/4 tsp. cinnamon, and then spoon mixture into an 8" or 9" square baking dish.
In a bowl, combine the biscuit mix (Bisquick), remaining 1/2 cup sugar, and the remaining 1/4 tsp. cinnamon.
Stir in the milk, the lightly beaten egg, vegetable oil, vanilla extract, and the lemon juice.
Pour the batter over top of the peaches in the baking dish.
Bake at 350° for 50 - 55 minutes, or until lightly browned, and a toothpick inserted into the topping comes out clean.
Allow cobbler to cool for 15 minutes and serve, (or serve cold).
Garnish with icing sugar, and ice cream or whipped cream, and fresh blueberries, if desired.
