These Fresh Peach Bars are simple to make and use ingredients you would already have in your kitchen!
I was wondering what type of baked goods I could make with the fresh peaches that are now in season, and I found this recipe in my morning newspaper, which I adapted to use with fresh peaches!
There aren't a lot of baking recipes for yummy treats using fresh peaches, so be sure to add this one to your favourites, or bookmark it!
Ingredients
1/2 cup butter (softened)
1/4 cup powdered sugar (icing/confectioners sugar)
1 1/3 cups all-purpose flour, divided
1/4 tsp. salt
1/2 tsp. baking powder
2 medium-size eggs
1 cup packed brown sugar
1/2 tsp. vanilla extract
2/3 cup fresh peaches (peeled, pitted, sliced and cut into half /chunks)
1/2 cup *chopped walnuts (see tip below)
1/2 cup semisweet chocolate chips, melted, optional
Directions
In a large bowl cream the butter and the powdered sugar until light and fluffy.
Gradually add 1 cup of the flour and the salt and mix until well blended.
Press into a greased (I used non-stick baking spray), 8" square baking dish and bake at 350° F for about 18 - 20 minutes or until lightly browned.
Meanwhile, in a small bowl, combine the remaining flour and the baking powder.
In a medium bowl, beat the eggs and the brown sugar until blended.
Beat in the vanilla extract.
Gradually add the flour mixture to the egg mixture.
Stir in the prepared peach chunks and the *chopped walnuts.
Pour evenly over the crust in the baking dish.
Bake at 350 ° F for about 30 minutes or until set.
Remove from oven, and allow to cool.
If desired (optional), drizzle melted chocolate over top.
Cut into squares and enjoy!
Freezing Bars Tip - I froze some of these peach bars to enjoy later.
If you wish to freeze some, either wrap them individually in clear plastic wrap or freeze them in a sealed container. When you remove them you will find they taste like fresh!
Tip for Chopping Whole Walnuts the Quick and Easy Way!
If you have only whole walnuts on hand, no worries, it is easy, and mess-free to chop them as follows:
Place the whole walnuts between a piece of waxed paper or parchment paper (or similar).
Using a baking /rolling pin roll over the nuts (see image below)
That's it! No mess and you have chopped nuts for your recipe!
