Mixed Frozen Fruit Cups

These Frozen Fruit Cups are easy to make, a low-fat frozen fruit snack, salad or dessert recipe made into individual servings of fruit.

Freeze the fruit servings in disposable plastic beverage glasses, or use foiled lined muffin liners to set in dessert glasses when ready to eat.

A great recipe for serving larger groups of people. One single recipe makes enough to serve to about 10. You can easily make a double batch if needed.







Ingredients

2 cans (20 ounces, each) crushed pineapple, not drained
8 ounces frozen, sweetened strawberries, thawed
1 can (12 ounces) peach slices, not drained, cubed
1 can (20 ounces) fruit cocktail, not drained
1 can (12 ounces) frozen orange juice concentrate, thawed
1 can (6 ounces) frozen lemonade concentrate, thawed
6 medium firm bananas, cubed


Directions

In a large bowl, combine all of the above ingredients.

Pour the mixture into individual plastic disposable beverage glasses, or into foil-lined muffin cups.

Freeze until solid.

Remove the fruit cups from the freezer about 40 minutes prior to serving to allow for partial thawing.

Makes 10 servings of about 3/4 cup each.

Total fat per serving - 1 gram.

Some varieties of peaches are easy to peel, and are easy to pull off of the pit. Other types of peaches however, are difficult and messy to peel with a knife.

Did you know that using a technique called "blanching", you can easily peel the skin off of the peach?

This method of removing the peel from peaches is a great method to use when preserving peaches by canning or freezing peaches, or to use when making peach jam or jelly.

Peeling one or two peaches which do not peel very easily is acceptable, but when you need to peel a large quantity of peaches at a time, this method of blanching is a choice way to get the job done!
