This Melon Ring Fruit Salad Recipe is a fun and different recipe idea for a fresh fruit salad for Christmas, Valentine's Day or anytime! (Of course you could also make this recipe for a healthy fresh fruit dessert.)
A Melon Ring Fruit Salad is very pleasing to the eye, and to the palate!

You can make the melon ring any shape you like - for example, a heart shape, Christmas tree shape, daisy shape, or any other theme shape you want (scroll down to see the pictures!).
1 honey dew melon
2 tbsp. lime juice
2 tbsp. honey
1 cup fresh raspberries
1 cup grapes (red or green)
1/4 cup fresh blueberries
1 large or 1 small fresh peaches, diced (*I used canned peaches)
2 kiwi, peeled, cut into small pieces
lettuce leaves (I used red leaf lettuce)
a large size cookie cutter desired shape of cut-out
Cut the melon crosswise into 3/4" slices, and remove the seeds and the rind.
Using a cookie cutter, cut out the desired shape on 4 (or more) melon rings, around the center.
Place the melon cut-outs on lettuce lined salad plates.
Cut the remaining melon into small pieces (bite size) pieces.
In a bowl, combine the lime juice and the honey and blend well till thoroughly mixed.
Add the grapes, kiwi, blueberries, peaches, and the left-over melon pieces and toss gently to coat the fruit with the lime juice mixture.
Add the raspberries last, and gently toss, just to coat, being careful not to break apart the tender raspberries too much.
Spoon the fruit into the center of the melon rings, allowing some fruit to "spill" over.
Serves 4 - 6.
