This recipe uses canned fruit to make a truly delectable salad. This recipe can also be used as a dessert.

I made this fruit salad yesterday, and it turned out amazing! Check out the pictures! VERY fresh tasting and scrumptious!
I used canned pineapple chunks, mandarin orange segments, and sliced peaches (chopped).
You can substitute, or add maraschino cherries if you like.
Adding red cherries would make it a perfect salad for Christmas!
Ingredients
1 can - (about 20 oz. size) - pineapple chunks (sweetened or unsweetened)
3/4 cup granulated sugar
2 tbsp. all-purpose flour
2 eggs, beaten
1 tbsp. lemon juice, fresh or bottled
1 cup whipping cream, whipped
1 can - (about 11 oz. size) - mandarin orange segments, drained
1 package - (about 10 oz. size) - miniature marshmallows
1 can- (about 10 oz. size) - sliced peaches, drained
Directions
Chop the sliced, drained peaches in half, and then in half again.
Drain the pineapple, reserving the juice, and set the pineapple chunks aside.
In a pan, combine the sugar, flour, beaten eggs, lemon juice and the reserved pineapple juice until smooth.
Cook and stir over medium-low heat, until mixture is thickened and bubbles appear on the surface. Stir often to prevent sticking and burning.
Allow the mixture to cool to room temperature.
Fold the whipped cream into the cooled egg mixture.
In a large bowl, combine the mandarin orange segments, marshmallows, sliced/chopped peaches, and pineapple chunks.
Gently fold in the cooked dressing.
Refrigerate fruit salad until chilled.
Serves 12 - 14.
