Making a cobbler for dessert is a great idea when peaches are in season locally. Who can resist a delicious, fresh peach cobbler?
This is a healthier, "lighter" and "less sugar" version of a classic peach cobbler that will be sure to delight the whole family, regardless of their dietary needs or restrictions!
Enjoy the natural sweetness of peaches without drowning them in unhealthy ingredients.
The addition of dates, cinnamon and orange juice give this cobbler a special kick!
Ingredients
FOR THE FILLING
5 medium size, fresh peaches
1/4 cup packed brown sugar (organic)
1 tsp. ground cinnamon
2 tbsp. arrowroot powder or cornstarch
1/2 cup water
1 tsp. vanilla extract
FOR THE TOPPING
1 cup old-fashioned oats (gluten-free)
8 pitted dates, coarsely chopped
1/3 cup almond meal or almond flour
1 tbsp. brown sugar (organic)
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 cup orange juice
3 tbsp. raw, unsalted creamy almond butter
Directions
FOR THE FILLING
Wash the peaches under cold water.
Pit the peaches, and cut into this slices (leave the skin/peel on, unless not desired).
Transfer the peaches to a large bowl (will be about 5 - 6 cups sliced peaches).
Add the brown sugar, cinnamon, arrowroot or cornstarch and toss to coat the peaches.
Stir in the water and the vanilla extract.
Transfer the peach mixture to a greased, 6-cup-capacity baking dish (or an 8" square dish), and spread evenly into bottom of dish.
FOR THE TOPPING
In a bowl, combine the oats with the chopped dates, almond meal or almond flour, brown sugar, baking powder, cinnamon and salt and mix well to combine.
Using a fork, stir in the orange juice and the almond butter until well combined, and clump-free.
Add the topping to the filling in the baking dish.
If desired, spray the topping lightly with canola cooking oil spray to make the topping more "crispy".
Bake at 375 ° F for 25 - 30 minutes or until the topping has turned golden brown, and the peaches are tender, but not mushy.
Allow to cool for about 10 minutes before serving.
Refrigerate left-overs for up to several days in the refrigerator.
If desired, re-heat in a microwave.
