These jam tarts are mini size. If you want to make larger ones, simply use larger cutters to make larger pastry shells.
Of course, any type of fruit jam can be substituted in place of the peach jam.
Ingredients
1 3/4 cup all-purpose flour
2 tbsp. granulated sugar
1/4 tsp. salt
1/2 tsp. cinnamon
3/4 cup butter
2 eggs yolks
1 cup peach jam (or your choice of flavour)
1 tbsp. whipping cream, not whipped
ice water
Round Cookie Cutter (2" - 3" for the mini tarts)
Directions
Combine the flour, sugar, salt and cinnamon in a bowl.
Add the butter, and mix together until mixtures resembles coarse crumbs.
In a small bowl, mix together (with a fork), 1 tbsp. ice water and add to the flour mixture. Combine together until the dough comes together, and can be made into a disc shape.
Roll out the dough to a thickness of 1/4".
Using a round shaped cookie cutter, cut out shapes, and press them into mini (2 - 3") tart or mini muffin tin pan. Shape the crust.
Fill each pastry shell with about 1 1/2 tsp. peach jam, and decorate the tops with cut-outs of pastry dough.
In a cup, combine the remaining egg yolk with the cream. Lightly brush the exposed dough with the egg yolk and cream mixture using a pastry brush.
Bake at 350° F for 20 - 25 minutes or until done.
Note - If you are making the tarts a larger size, the total baking time will need to be increased accordingly.
