Why not include FRUIT in your next homemade chicken salad?
This easy-to-make Chicken Salad with Peaches or Nectarines Recipe includes healthy and delectable fresh fruit to make it the best chicken salad ever!
You can (optional) also make this into a Curried Chicken Salad (see below).
1/2 cup light or cholesterol free mayonnaise
2 tbsp. lime juice
1 tsp. granulated sugar
1/4 tsp. ground ginger
1/8 tsp. salt (or to taste)
1/8 tsp. ground pepper (or to taste)
2 cups cubed, cooked chicken
2 fresh peaches or nectarines, cubed
1/4 cup sliced, green onions
1/4 cup toasted, slivered almonds, optional
In a bowl, combine the mayonnaise, lime juice, sugar, ginger, salt and pepper.
Gently stir in the chicken, peaches and green onions.
Cover and chill a few hours before serving.
Add the almonds (optional) just prior to serving.
Note - To make Curried Chicken Salad, and 1/2 to 1 tsp. curry powder.
Makes about 3 cups of delicious chicken salad.
