Ingredients
Note - If you are using a glass 9" x 13" baking pan instead of a metal baking pan, reduce the oven temperature to 325° to prevent over-baking.
FOR THE CAKE
1/2 cup butter
2 cups granulated sugar
2 medium eggs, or 3 small eggs
1/4 cup plain yogurt or peach yogurt
grated rind of 2 lemons
3 cups all-purpose flour
2 tsp. baking powder
1 cup milk
1/4 cup fresh lemon juice
FOR THE DRIZZLE
3/4 cup icing sugar
2 tbsp. lemon juice
FOR THE TOPPING
grated rind of 1 lemon
2 cups plain yogurt or peach yogurt
4 cups fresh, sliced peaches (6 - 8 peaches) or canned peaches
2 tbsp. fresh lemon juice (if using fresh peaches)
Directions
FOR THE CAKE
In a large bowl, with an electric mixer, beat the butter with 2 cups of the sugar.
Beat until light and fluffy.
Beat in the eggs, the yogurt and the lemon rind.
In another bowl, stir the flour with the baking powder.
Stir the flour and baking powder mixture into the egg mixture, alternating with the milk and the (1/2 cup) lemon juice.
Spoon the mixture into a greased 10" Bundt pan, or a greased 9" x 13" baking pan.
Bake at *350° F for about 50 minutes, (if using a 9" x 13" time for about 40 minutes), or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the baking pan for about 5 - 10 minutes.
Invert the cake onto a plate or cake stand.
FOR THE DRIZZLE
In a bowl, stir the icing sugar with the lemon juice until dissolved.
Drizzle the lemon mixture over the cake, and allow to cool.
FOR THE TOPPING
In a bowl, stir the lemon rind into the yogurt.
If using fresh peaches, sprinkle the peaches with lemon juice (to keep them from turning discolouring), and gently toss to coat.
When ready to serve, slice pieces of cake, and top with yogurt mixture and peaches.
