I made this pie using raspberries AND peaches, however if you want to make this pie using ONLY PEACHES, just substitute the raspberries with all peaches!

The simple to make pie crust is a shortbread type of crust which works amazingly for this pie!
This fresh fruit pie is one of our family favourites.
You can use different fruits instead of the raspberries, for example you can include fresh blackberries, or blueberries, or sliced strawberries.
I used a glass 9" pie dish for this recipe.
I like to add a dollop of whipped cream or whipped dessert topping when serving this treat.

Ingredients
Note - you can use fresh or canned peaches for this recipe. If you are using canned peaches drain the peaches before measuring and adding them in.
FOR THE CRUST
1/2 cup margarine or butter, softened
1 cup all purpose flour
2 tsps. granulated sugar
FOR THE PIE FILLING
1 cup granulated sugar
1 cup water
3 tbsp. cornstarch
4 tbsp. raspberry flavoured gelatin (Example: "Jello")
1 1/2 cups fresh raspberries
1 1/2 cups peaches, sliced (OR canned peaches)
whipped cream, for garnishing, optional
Directions
In a bowl, combine the butter, all purpose flour and the sugar and mix well with a fork.
Blend, knead (mixture should form a ball), and press the dough into a pie baking dish.
Using a fork, pierce the pie crust in several places, (at the bottom of the crust), to prevent the dough from bubbling up in the oven.
Bake at 425° F for about 12 minutes, or until the crust is just beginning to turn golden at the edges.
In a cup, using a few spoons of the 1 cup water, mix the cornstarch with spoon or small whisk, until it forms a thick paste.
In a pan, over medium heat, mix the water and the sugar with a wooden spoon until the sugar is dissolved.
Add the cornstarch/water mix and stir constantly to thicken, until mixture becomes clearer and reaches a full rolling boil. Be sure to continue to stir this mixture to prevent sticking and burning.
Remove mixture from heat and stir in the gelatin powder ("Jello") and stir until well combined.
While still hot, add the peaches and peaches. Stir gently with a wooden spoon so as not to break apart the fruit too much. Stir until just combined.
Pour into prepared pie crust.
Refrigerate for a few hours until set.
Top each slice of pie with a dollop of whipped cream or whipped dessert topping just before serving (optional).
No bake pie recipes help to keep your kitchen cool on warm days!
Note - if you are using a deep dish pie plate, you may want to do this no bake pie recipe plus one half to better suit the pie plate size.
