I just made this Easy Peach Cake Recipe for dessert using fresh local peaches!

A recipe for peaches or nectarines that makes the most delicious snack or dessert with healthy fruit.
I used 6 medium size fresh peaches.

If you love peaches the way I do, you will love this fresh tasting cake.
The peach season is a short season in the area where I live, so I like to bake with peaches as much as I can during the time when peaches are ripe locally.
Ingredients
1 1/2 cups all-purpose flour
2 tsp. baking powder
1 tsp. ground cinnamon
3/4 cup butter, softened
3/4 cup granulated sugar
3 eggs, beaten
1 tsp. vanilla extract
6 ripe peaches or nectarines
2 1/2 cups corn flakes cereal, lightly crushed
whipped cream or ice cream to serve, optional
Directions
Peel, pit, slice and roughly chop the peaches (or nectarines).
In a large bowl, whisk the flour, baking powder and the cinnamon together, until well combined.
In another bowl, using an electric hand mixer, beat the butter with the sugar.
Add the eggs and the vanilla to the butter mixture, and continue to beat until well combined, and the mixture is smooth.
Add the butter mixture to the dry (flour) mixture, and beat just until combined, DO NOT over-mix.
Spoon one-half of the cake batter into a greased 9" springform pan, and smooth the surface of the batter with a spatula.
Arrange the prepared peaches (or nectarines) on top of the batter.
Lightly stir the cornflakes into the remaining batter and drop spoonfuls of the mixture over the peaches (or nectarines).
Bake at 325° f for about 60 - 65 minutes, or until cake is firm, and golden brown in colour.
Serve warm or cool with (optional), whipped cream or ice cream.
Baking Tip
To lightly chop the cornflakes cereal, place the cornflakes in a plastic bag and roll over the bag lightly with a rolling pin.
