I made this yesterday, and it turned out so good-as usual!

This is actually a very simple recipe, with consistent, no-fail results!

Serve this peach treat warm or cooled plain, or with a dollop of whipped cream, whipped dessert topping or ice cream.

Or, if you like, add a spoon of Greek yogurt on top!

Homemade Peach Cobbler Dessert

Ingredients

FOR THE BOTTOM

1/4 cup brown sugar
1 1/2 tbsp. corn starch
1/2 tsp. ground cinnamon
1 tsp. lemon juice
1 can (28 oz.) peach slices in syrup or juice
1/4 cup of reserved syrup or juice from canned peaches
1/3 cup raisins, optional

FOR THE TOPPING

1/4 cup butter
1/4 cup granulated sugar
1 egg, slightly beaten
1 tsp. vanilla extract
1 1/4 cup all-purpose flour (or part whole-wheat flour)
1 tbsp. baking powder
1/2 cup milk







Directions

FOR THE BOTTOM

Strain the peaches, reserving 1/4 cup of syrup or juice.

In a large bowl, combine the brown sugar, corn starch, cinnamon, and the lemon juice.

Add the peaches and the raisins (optional) and the 1/4 cup of reserved juice or syrup, and toss to coat the fruit.

Transfer the peach mixture to a 9" square baking dish.

FOR THE TOPPING

In a medium size bowl cream the butter with the granulated sugar (using a fork) until well combined.

Continue to stir and add the vanilla and the lightly beaten egg.

Add the flour and the baking powder alternately with the milk.

Batter will be quite thick.

Use a spoon to drop the batter over the peaches in the baking dish.

Bake at 350° f for about 30 - 35 minutes or until the juices have bubbled up and the top has become golden in colour.

Serves 9.

Serve warm (that's our favourite way), or cooled plain, or with a dollop of whipped cream, ice cream or a topping of your choice!
