This Peach Conserve with Amaretto Liqueur combines pecans and Amaretto Liqueur with fresh peaches to make a delicious conserve with peaches.

A website visitor sent me this recipe, and if you like peaches and you like Amaretto like I do, you will love the creation this recipe makes.
This conserve recipe also includes golden raisins and orange rind.
Ingredients
1 cup golden raisins
3/4 cup boiling water
2 lbs. fresh peaches, peeled, pitted, chopped
4 tsp. grated orange rind
1/3 cup orange juice
2 tbsp. lemon juice (bottled is okay)
3 cups granulated sugar
1/2 cup chopped pecans
3 tbsp. Amaretto liqueur
Directions
In a small bowl, place the raisins with the 3/4 boiling water covering them. Let stand for 5 minutes.
Place raisins with liquid in a large pan.
Add the peaches and the orange rind.
Bring the mixture to a boil, then reduce heat, cover and simmer for about 12 minutes, or until peaches are tender.
Stir in the orange juice and the lemon juice, then return the mixture to a boil.
Add the sugar.
Cook, uncovered, over medium heat for about 25 minutes, or until mixture thickens, stirring occasionally to prevent sticking and burning.
Add the pecans, and cook for 5 minutes longer.
Remove mixture from the heat, and stir in the Amaretto liqueur.
Carefully ladle hot mixture into hot sterilized half-pint jars, leaving 1/4 headspace.
Skim with a metal spoon to remove any foam and air bubbles.
Wipe rims and adjust lids.
Process in a boiling-water canner for 5 minutes.
Makes about 5 half-pint jars of delicious Peach Conserves with Liqueur.
