With its peachy gelatin filling, decadent cream cheese layer, and fluffy cream topping, this pie is a nice change from the traditional baked peach pie.
Ingredients
1 - (15 ounces size) can sliced peaches
2 tbsp. brown sugar
1/8 tsp. ginger, or more
1 - 3" cinnamon stick
1 pkg. - (85 gram size), peach gelatin
1 pkg. - (125 gram size) cream cheese, softened
2 tbsp. butter, softened
1/8 tsp. ground nutmeg, or less
1 - (9" size) pastry pie shell
1 - (250 gram size) container whipped dessert topping, thawed
Directions
Strain the sliced peaches to remove the liquid (syrup), reserve 1 1/3 cups of liquid. (If necessary add water to the liquid to make 1 1/3 cups.)
Chop the peaches, and set aside.
In a pan, combine the syrup, brown sugar, ginger and cinnamon stick, and bring mixture to a boil over medium heat.
Reduce heat, cook and stir constantly (to prevent sticking and burning), for 5 minutes.
Remove from heat, and discard the cinnamon stick.
Stir the gelatin into the syrup mixture until dissolved.
Add the chopped peaches.
Refrigerate until partially set, about 40 minutes. (Be sure not to let it set too much.)
In a bowl, beat cream cheese, butter and nutmeg until smooth.
Spread the cheese mixture over the bottom and up the sides of the crust.
Pour the gelatin mixture over the cream cheese layer.
Chill until serving.
Spread with whipped topping before serving.
Makes about 6 - 8 servings.
