Freshly harvested, ripe peaches make the best ice cream.
Be sure to use fresh, fully ripe, but not overripe peaches.
Ingredients
1 tbsp. unflavored gelatin
2 1/2 tbsp. cold water
1 1/2 cups milk (I use 1% or 2% fat)

1/2 cup evaporated milk
2 cups peeled, pitted, sliced peaches
1 3/4 cups granulated sugar, divided
1 tsp. vanilla extract
1 tsp. almond extract
1/8 tsp. salt

I use the Cuisinart Model as listed below, third one from the left, (or third down in mobile view).
It works amazingly!
Directions
In a large bowl, combine the milk, half-and-half cream, and the evaporated milk.
In a microwave-safe, small size bowl, sprinkle the unflavored gelatin over the cold water, and allow to stand for 1 minute.
Microwave the gelatin and water on "high" power for 20 seconds.
Stir mixture until gelatin is completely dissolved.
Add the gelatin to the milk mixture in the large bowl.
In another bowl, mash the peaches (use a potato masher), and stir in 1 cup of the sugar.
Add the peach mixture, extracts, salt, and the remaining 3/4 cup sugar to the cream mixture, and stir until the sugar is completely dissolved.
Fill the cylinder of the ice cream maker two-thirds full and process according to the ice cream maker machine manufacturer's instructions. (I processed the mixture in my Cuisinart Ice Cream Machine for about 30 minutes.)
Transfer ice cream to a freezer safe bowl, and freeze overnight.
ENJOY this amazing frosty peach treat for dessert or snack time!
Makes about 1 quart of ice cream.
TIP - If desired, move the frozen ice cream to the refrigerator freezer for a couple of hours before serving so it will be a little less firm, and easier to scoop (providing your chest/deep freezer is set at a colder temperature than the freezer in your refrigerator).
Note - if you do not have an ice cream maker machine, you can still make homemade ice cream with peaches.
