This is the Easiest Peach Pastry Dessert Recipe ever!
Made with croissants baked in the oven with peach slices, these pastries taste amazing, you won't believe how easy they are to make!
I made these today, and they tasted exactly like they were made from "scratch"!
Served with a dollop of whipped cream, ice cream, Greek Yogurt, or creme fraiche, they are a perfect finale to any dinner.
They would also make a great breakfast or brunch idea, or a snack at tea time!
This recipe can be made with any canned or fresh stone fruit: mangos, apricots, pears, or nectarines.
Also, if you prefer, use a loaf of sliced brioche bread instead of the croissants.
Note - I made this dessert with canned peach slices (which I sliced once more to make thinner slices).
To make this recipe with fresh fruit, cut the fruit into 1/4 or 1/2 inch slices.
3 medium or large size croissants or sliced brioche
5 tbsp. butter
1/3 cup apricot jam
1 can (approx. 500 ml. size) sliced peaches
1 tbsp. granulated sugar or superfine sugar
Preheat oven to 400° F.
Drain the sliced peaches, reserving a small amount of juice/syrup.
Cut each croissant (or brioche slice), in half to make 6 pieces.
Butter both sides generously.
Lay the slices in an ovenproof dish just large enough to hold them.
Spread the tops with the apricot jam.
Lay the peach slices (if the peach slices are thick, slice each one in half), on top of the bread (about three or four slices of peach per croissant half).
Drizzle tops with a tiny bit of the reserved juice/syrup.
Sprinkle tops with sugar.
Bake at 400° F for about 15 - 20 minutes, or until the croissants (bread) are slightly crisped and browned at the edges.
Best served warm with a dollop of whipped cream, whipped dessert topping, creme fraiche, vanilla ice cream, OR serve plain.
