I like to make this peach pie when the peach season is in "full swing".
The local peach season is quite short, so when peaches are ripe, our family enjoys them every day!
If you do not have fresh peaches on hand, you can use canned peaches instead.
The delectable flavour of fresh, juicy peaches is hard to beat.

Ingredients
FOR THE "CRUST"
1/2 cup butter or margarine, softened
1/4 cup icing sugar (confectioners' sugar)
1 cup all-purpose flour
4 - 5 cups sliced, fresh or canned peaches
FOR THE GLAZE
2 tbsp. granulated sugar
1 1/4 tbsp. cornstarch
1/2 cup orange juice
1/2 cup apricot jelly, raspberry jelly (or another fruit jelly)
whipped cream, optional
Directions
FOR THE "CRUST"
In a large mixing, using a fork, bowl cream the butter (or margarine), and the sugar, until well combined.
Add the flour and continue to mix.
Press / pat, the dough onto a greased 12" pizza pan, and prick with a fork in several places. (This will help to prevent the crust from "lifting up".)
Bake the crust at 350° F for about 10 - 15 minutes, or until golden brown in colour.
Allow the crust to cool completely.
Arrange the sliced peaches on the crust.
FOR THE GLAZE
In a pan, mix together the sugar and the cornstarch.
Gradually add the orange juice and the jelly, and mix well.
Cook the jelly mixture over medium heat until smooth.
Bring mixture to a boil, and allow to boil for about 2 minutes. Stir constantly to avoid sticking and burning.
Remove the mixture from the heat, and allow to cool slightly, (about 5 - 10 minutes).
Spoon the glaze over the sliced peaches on the pizza pie crust.
Chill peach pizza pie for about 1 1/2 hours, or until well set.
Garnish with whipped cream at time of serving, if desired.
Makes about 12 servings.
