This Spiced Peach Preserves Recipe is an old-fashioned favourite recipe for canning peaches with spices.

Cinnamon and cloves spice up these peaches to make a delectable canned peaches treat in a jar!
You can enjoy the taste of summer in the middle of winter!
If you have a lot of small size peaches on hand, this is a great recipe to use them. What a peachy idea ;)
Ingredients
Note - small peaches or medium size peaches which can be halved
5 cups granulated sugar
1 cup vinegar
12 inches of "stick" cinnamon, broken in pieces
2 tsp. whole cloves
2 cups water
5 pounds small or medium size peaches
Directions
FOR THE SYRUP
In a large pan, combine the sugar, vinegar, cinnamon, cloves, and the water.
Bring the mixture to a boil, stirring constantly to avoid sticking and burning, then reduce heat.
Peel peaches, and, if desired halve and pit.

To prevent the peaches from darkening, add the peaches to the syrup as soon as they are peeled.
Simmer for about 5 minutes, and then remove from heat.
FOR CANNING
Spoon the peaches into hot, clean jars, leaving about 1/2 inch headspace.
Return the syrup to a boil, stirring almost constantly to avoid sticking and burning.

Wipe rims, and adjust lids.
Process in a boiling water bath for 20 minutes (starting the timer when the water boils).
