Homemade Peach Salsa PreservesMake a Yummy Peach Salsa Recipe

This combination of fruit AND vegetables in a salsa makes it a truly fabulous flavour, and a remarkable colour!

If you serve this to friends, be sure to keep the recipe handy, because they will want to know the ingredients too! 


Ingredients

6 cups (3 pounds) prepared peaches
1 1/4 cups chopped red onion
3 Jalapeno peppers, finely chopped
1 red pepper, chopped
1/3 cup finely chopped cilantro
1/2 cup white vinegar
2 tbsp. liquid honey
1 garlic clove, finely chopped
1 1/2 tsp. ground cumin
1/2 tsp. cayenne pepper







Directions

Blanch, peel, pit and chop peaches, and measure out 6 cups.

Combine the peaches, onion, peppers, cilantro, vinegar, honey, garlic, cumin and cayenne pepper in a large stainless steel saucepan.

Bring to a boil, stirring constantly to avoid sticking and burning.

Allow mixture to boil gently stirring often, for 5 minutes, then remove mixture from heat.

Ladle the hot salsa into clean, hot jars, allowing for a 1/2 inch headspace, and remove air bubbles.

Wipe jar rims, and adjust lid and band until "finger tip" tight.

Process jars with salsa in boiling water bath.Altitudes up to 1,000 feet - boil filled 250 ml. jars - 15 min., and boil filled 500 ml. jars for 20 minutes.

Allow jars of salsa to cool, then label and store in a cool, dark place.

Makes about 8 - 250 ml. size jars.
