This Chilled Peach Soup Recipe with Schnapps and Wine makes a most delicious cold summer soup.
Peach soup can be served as a main dish, an appetizer prior to a meal, or as a dessert finale.
Cold fruit soups are very refreshing and delicious on a warm summer day.
Take advantage of making peach soup when the peaches are "in season" locally and treat your family or friends to a "specialty soup", healthy and scrumptious!

1 cup dry white wine
1 cup peach schnapps
1/2 cup granulated (white)sugar
1 tsp. chopped fresh mint leaves
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 cups cream (half-and-half cream)
10 fresh peeled peaches, sliced
yogurt and extra peach slices, for garnish, if desired
In a pan, combine the wine, peach schnapps, sugar, chopped mint leaves, cinnamon and the half-and-half cream.
Stir the above ingredients until well blended and the sugar is dissolved.
Add the sliced peaches, and cook the mixture, over medium heat for about 15 minutes. Be sure to stir almost constantly to prevent sticking and burning. (Reduce heat if necessary).
When the peaches are tender, remove the mixture from the heat, and allow the mixture to cool for about 15 minutes.
Transfer mixture to a blender or a food processor, and blend/process until mixture is completely smooth.
Cover and refrigerate until ready to serve.
Garnish with a dollop of yogurt and a fresh peach slice, if desired.
