This Easy Almond Peach Tart Recipe (check out the pictures!) with jam centers makes the best homemade tarts with a bit of almond extract for amazing flavour ... and ... you most likely already have these ingredients in the kitchen!
These scrumptious baked goods are a definite family favourite in our home!
If you choose to, you can easily substitute the peach jam with any other type of fruit jam.
As you can see from the picture, I made half of the tarts with strawberry jam.
I usually make a triple recipe of these baked treats, and store them in the freezer.
Whenever I need to have a delectable snack on hand ... the tarts are ready and waiting ;) They freeze very well in a air-tight container for several weeks.
1/2 cup butter, softened
1/2 cup margarine
2/3 cup granulated sugar
2/3 cup brown sugar, packed
1 egg, medium or large
1 tsp. almond extract
1 1/3 cups all-purpose flour
3/4 tsp. baking powder
peach jam or any other type of jam
muffin cups (large size)
In a large bowl, using a fork, mix the butter, margarine, granulated sugar and brown sugar until well combined.
Add the egg and the almond extract and continue to mix.
Add the flour and the baking powder (gradually) and continue to mix; you will need to use your hand as the dough becomes thick. The dough should be able to be formed into a ball. If necessary(if the dough is sticky) you can add up to 1/4 cup more flour.
Make small balls of dough, about 2 inches in size, and place the ball of dough into muffin cups (or greased muffin baking tin cups).
Make a small indentation in each ball of dough, about 3/4 inch deep, and fill with about 1/2 teaspoon of peach jam.
Bake tarts at 350° for about 20 minutes, or until tarts start to turn golden brown.
Make 12 tarts.
