This Fresh Peach Upside Down Cake Recipe with slivered or sliced almonds makes a delicious peach cake for dessert or snack using fresh peaches.

Ingredients
FOR THE PEACH TOPPING
2 tbsp. butter
1/3 cup brown sugar, packed
4 medium size peaches, peeled, pitted and sliced (1/2" slices)
FOR THE CAKE
1/3 cup slivered/sliced almonds, (slightly toasted - see below, optional)
1/2 tsp. salt
1 cup all-purpose flour
1 tsp. baking powder
3/4 cup granulated sugar
1/4 cup brown sugar, packed
2 medium eggs
6 tbsp. butter, melted and cooled
1/2 cup sour cream
1 tsp. vanilla extract
1/4 tsp. almond extract
additional slivered or sliced almonds for garnishing, optional
Directions
FOR THE PEACH TOPPING
Add the butter to a 9 inch (an 8 inch pan will be too small) round cake pan, and place the pan in a 350° F oven for a few minutes to allow butter to melt.
Sprinkle the brown sugar evenly over the melted butter.
Arrange the prepared peach pieces on top of the melted butter/sugar mixture in a circular pattern (see image below).
FOR THE CAKE
Using a blender, or a food processor, blend the almonds and the salt together until finely ground, about 10 seconds.
In a medium size bowl, using a fork, mix together the almond mixture, flour and baking powder, until well combined.
In a large size bowl, whisk the eggs and the sugars together until the mixture thickens, about 1 minute.
Slowly stir in the melted butter, combine well, and add the sour cream, vanilla and almond extracts.
Stir the flour mixture into the butter mixture, just until combined, do not over-mix.
Carefully drop spoons full of the cake batter over the peach slices in the pan and smooth the top with the back side of a large spoon or a spatula.
Bake at 350° F for about 45 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool for about 10 minutes, and then invert the peach upside down cake onto a serving plate.
Serve warm or cooled plain, or with a dollop of whipped cream or whipped dessert topping.

How to Toast the Slivered Almonds
To toast the sliced/slivered almonds, add them to a dry skillet, (or spray the skillet with a tiny bit of oil spray), set on medium heat, and mix almost constantly with a heat resistant spatula or spoon, for a few minutes, until toasted.
Or, toast the nuts in the oven. Spread the sliced/slivered almonds in a single layer on a baking sheet. Bake in the oven at 350° F for a few minutes, stirring occasionally. Keep an eye on them, they will become burnt very quickly.
