A fabulous recipe for a mixed fruit conserve.
These "stone fruits" are commonly combined together, complementing each other in both flavour and texture.
Ingredients
1 1/2 pounds peaches (about 6 medium size peaches)
1 pound pears (about 4 medium size pears)
3/4 pound red plums (about 5 medium size plums)
4 cups granulated sugar
1 cup raisins
1/2 cup chopped nuts
1/4 cup lemon juice
Directions
Peel, pit and dice the peaches, and measure out 3 cups.
Peel, core, and dice pears, and measure out 2 cups.
Pit and dice plums, and measure out 2 cups.
In a large Dutch oven or kettle, combine the prepared fruit - the peaches, pears, plums, sugar, and the raisins.
Heat and stir the mixture until the sugar is dissolved.
Bring the fruit mixture to a full, rolling boil.
Allow mixture to boil hard, uncovered, for about 15 - 18 minutes or until the syrup sheets from a metal spoon. Stir constantly to avoid sticking and burning.
Stir in the chopped nuts and the lemon juice.
Remove the mixture from the heat, and skim off the foam with a metal spoon.
Ladle at once into hot, clean, jars, leaving a 1/4 inch headspace.
Wipe jar rims and adjust lids.
Process in a boiling water bath for 15 minutes (start timing when the water returns to boiling).
Makes about 6 or 7 - 1/2 pint size jars of mixed fruit conserve.
