This Peach Tart Recipe with Greek yogurt is quick and easy, and healthy!
If you prefer, you can substitute the greek yogurt with crème fraiche.
You can use fresh peaches OR frozen peaches that have been thawed, and the excess liquid discarded.
Of course, if you make your own pie pastry, you can use that instead of purchasing pie pastry!
1 15 oz. box (2 sheets) prepared pie pastry
3/4 pound fresh peaches, or 1 pound frozen peaches, thawed
1/3 cup apricot jam
8 oz. greek yogurt or crème fraîche
1/4 cup granulated sugar
3 tbsp. pistachios, coarsely chopped
Roll out pastry on a floured surface, and cut pastry into about 3 1/4" diameter circles.
Place cut out pastry rounds on a parchment paper lined baking sheet and poke each circle several times with a fork (to prevent the pastry from buckling up).
Beat together the egg and 1 tbsp. water, and brush over each pastry round.
Sprinkle each circle with a little sugar.
Bake pastry rounds at 375° F for about 10 to 12 minutes, or until golden.
Allow to cool.
Peel and cut the fresh peaches into 1/4" diced pieces (if using fresh peaches).
Heat the jam in the microwave until just hot and pass through a fine sieve.
In a bowl, gently toss the strained jam with the peaches.
In another bowl, stir together the greek yogurt and the sugar.
Spread a tablespoon of the yogurt mixture onto each pastry circle.
Top each with glazed peaches, and sprinkle with *chopped pistachios.
Note - to chop whole pistachios, use a rolling pin on a cutting board.
