The delightful combination of peaches and strawberries makes this a VERY flavorful jam!
Ingredients
1 1/4 cups peeled, finely chopped peaches
2 cups stemmed, fresh strawberries
1 pkg. (1 3/4 ounce size) powdered fruit pectin
5 cups granulated sugar
Directions
Combine the sliced strawberries and the chopped peaches in a large saucepan.
Stir in the pectin.
Cook over medium-high heat until the mixture comes to a full rolling boil.
Stir often to prevent sticking and burning.
Stir in the sugar, and return mixture to a full rolling boil.
Boil for 1 minute, stirring constantly to avoid sticking and burning.
Remove mixture from heat, skim off the foam if necessary.
Pour jam into jars or freezer-safe containers.
Cool the jam to room temperature, about 1 hour.
Cover with a blanket or tablecloth, and let stand on the kitchen counter or table overnight or until set. (Not longer than 24 hours.)
Refrigerate jam for up to three weeks, or freeze the jam for up to 1 year.
Makes about 3 1/2 pints of delicious peach and strawberry jam!
